Oven Roasted Tomato
- Roma tomatoes
- Fresh garlic
- Extra virgin olive oil
- Salt and Pepper
- Fresh Thyme
My friend gave me a whole bag of her organic homegrown tomatoes. After I tried making these at home, I knew I could never go back to the store bought sun dried tomatoes. They will burst inside your mouth. They are so simple to make and it makes any dish much more elegant. Just need some patience while you watch them dry and smell the fragrance fill the house.
Cut the tomatoes in half. In a large bowl drizzle some olive oil with salt and pepper. Toss. Put the oven to 200F. Mince the garlic and put them on top of the tomatoes.
Now is the waiting period. If you use cherry tomatoes, you should leave it in the oven for about 2 hours. They told me roma tomatoes take about 8 hours but it actually took me 12 hours. Add the fresh thyme at the end to keep them from burning. About 30 - 60 minutes before you take them out of the oven. I took out the smaller sized tomatoes as soon as they looked ready. You can marinate them inside olive oil to keep longer. But they are delicious as pizza topping, sandwiches, pastas, and salads.
